Harvest 25.5Brix, ph 3.39 TA 0.74 Making this Carignane gets me all fired up during the end of harvest. This is how is goes down every year. Carignane ripens at the VERY END of Harvest - right about the time that Cabernet Sauvignon is ready. It is cold outside, wet and rainy too!! It takes two rains, and then about another two weeks and just about the time to throw in the towel - LET'S PICK!!! This prettly wine is full of bright cherry-rhubarb, butterscotch, maple syrup, candied apple spice and D-E-L-I-C-I-O-U-S!! Give it a go and see what you think.
