I love describing this process to you - it really always happens like this: Harvest 25.5 to 26.0 Brix, ph 3.39 TA 0.74. Making this Carignane gets me all fired up during the end of harvest. Every year, this is how it goes down. Carignane ripens at the VERY END of Harvest - right about the time that Cabernet Sauvignon is ready. It is cold outside, wet and rainy too!! It takes two rains, and then about another two weeks and just about the time to throw in the towel - LET'S PICK!!! This pretty wine is full of bright cherry-rhubarb, butterscotch, maple syrup, candied apple spice and D-E-L-I-C-I-O-U-S!! Give it a go and see what you think.
